Jamie Oliver has these really nice recipes in his cook books for making your own pasta. Even though I love cooking I never tried it so far. It looks like quite a bit of effort for not a lot of outcomes. But since the outcomes of my weekend tasks matters less then the fun I had a go at it and I made my own ravioli.

Ingredients

I followed Jamie’s recipe and made dough out of 500g of very fine flour and 5 eggs. On the bench top I made a mould with the flour and placed all the eggs in the middle.

With my hands I mixed it all together till I had a nice dough which I kneaded for another 3 minutes. I wrapped it in cling film to let it rest in the fridge and started with the filling

After the dough was rested for about an hour I rolled it out with a pasta machine till I had nice thin sheets.

According to Jamie Oliver I can stuff pretty much anything into ravioli. So I created my own filling out of roasted pumpkins, rocket and ricotta.

The second filling I made out of dried tomatoes, basil and pecorino.

I placed a spoon full of my filling in the middle, put a second sheet on top and stuck it all together, so the edges are perfectly sealed. I made only a few ravioli as they were quite big.

To cook my ravioli I put them straight into boiling salted water. Fresh ravioli cook very fast and only take a few minutes. I only added a bit of extra virgin olive oil and some salt and pepper to serve them.

  1. As the resident DesignGeek Guniea Pig, let me tell you – these were WORTH the effort. Note the last image showed the special ones made for me, with hot coppa (a spicy prosciutto). The salt hit was fantastic.

  2. Your recipe looks simply delicious… I just HAVE to try the dried tomato/basil/pecorino filling, it sounds so great my mouth is already watering!
